Head Sommelier - Ref 896

Action Recruitment are currently recruiting a Head Sommelier for our client a luxury 5 star hotel in Dublin. The candidate will take on overall responsibility for the operational management of all wines within this luxury hotel and ensure guests receive a five star wine experience.

Main Duties:

• Search, select and buy wines from around the world.
• Ensure that all wines are stored, presented and served to the required five star standards
• Create, maintain and developing all wine stocks, wine sales and wine lists.
• Regularly review the wine list in line with the current trends and ensure that the wine list appeals to a diverse customer base
• Support all Managers in the sales of wines and to advise them on the best wines appropriate for the guest or event
• Ensure that the wine service provided to clients is at the highest standards
• Ensure that the beverage cost and contribution margins for wine meets the hotel targets.
• Provide wine tasting to team members and provide training on how to recommend and up-sell wines to guests to maximise revenue and profit
• Compose all wine lists to achieve maximum guest satisfaction, profit, prestige and trade recognition
• Be available at service times to support the team and provide a five star service
• Have a comprehensive knowledge of all International wines, their characters and vintage merits with a detailed knowledge of the characteristics of all wines on the wine list.
• Have a comprehensive knowledge of after dinner drinks, i.e. Ports, Cognac, Armagnac’s, Liqueurs, etc.
• Create a wine experience by advising guests on wine and after dinner drinks choices while serving them with accuracy and flair
• Liaise with suppliers to arrange frequent product knowledge and in house training in wine.

Requirements:

• Qualified Sommelier
• Previous experience of similar role within a Michelin starred restaurant or five star hotel
• Strong knowledge of classical and modern cuisine and wine pairing
• Experience in a senior position leading a team
• Fluent in both written and verbal English
• Accounts and Sales knowledge
• Operational orientated with business awareness
• Immaculate presentation
• Must be able to work in EU.
